Red Wine Poached Pears
ingredients
Poached Pears- 2 pears
- 1/3 bottle red wine
- 1/2 tsp vanilla extract
- 1 cinnamon stick
- 1 bay leaf
- 1 whole clove
- 2/3 cup sugar
- 8 oz softened mascarpone cheese
- 1/4 cup half and half
- pinch of cinnamon
- 1/4 cup powdered sugar
- 1/4 tsp vanilla

Peel pears and remove stems. Slice pears in half and remove seeds and core with a melon baller or spoon.

Bring wine and an equal amount of water to a simmer. Then add vanilla, cinnamon stick, bay leaf, clove and sugar to the wine mixture. Add pears to liquid and simmer for 30 minutes or until pears are fork tender (this may take longer if pears are not very ripe). Cool, then refrigerate. (May refrigerate overnight)

Mascarpone Filling:

Combine all ingredients into a blender or food processor. Blend until thickened and smooth. Refrigerate until ready to serve.

To serve:

Remove pears from liquid. Simmer liquid until reduced by about 1/2 and thick & syrupy. Add 1 T butter to sauce, stir. Cool.

Fill each pear half with mascarpone mixture, drizzle with sauce. Serve.
