Tom Yum Soup
ingredients
- 3 to 4 cups chicken stock
- 1 stalk lemongrass
- 3 kaffir lime leaves
- 12-14 large raw shrimp
- 2 tbsp fish sauce
- 1 to 2 small red chillies
- 3 cloves garlic, minced
- Handful shiitake mushrooms, sliced
- 1 red pepper
- 1/2 can coconut milk
- 1/3 cup fresh coriander, chopped
- Optional: lime juice / brown sugar

1. Pour stock into pan and turn heat med to high

2. Add processed lemongrass, boil for 5 mins.

3. Add garlic, chilli, lime leaves and mushrooms, cook 5 mins.

4. Add shrimp, pepper, cook 5 to 6 mins.

6. Turn down heat to low and add coconut milk and fish sauce. Test soup. season with fish sauce/lime juice/brown sugar if nec.

7. Serve with fresh coriander sprinkled over.
