Mandarin Pasta Salad
ingredients
- Dressing:
- 1 tsp. fresh ginger root (I use dried equivalent)
- 1 garlic clove, minced
- 1/3 cup rice vinegar
- 1/4 cup orange juice
- 1/4 cup vegetable oil
- 1 tsp. sesame oil
- 1 envelope Lipton Recipe Secrets Onion Soup Mix
- 2 teaspoons sugar
- Salad:
- 8 ounces bow tie pasta, cooked, drained and cooled
- 1/2 cucumber, chopped
- 1/2 cup red bell pepper, chopped
- 1/2 cup red onion, chopped
- 6 ounces fresh baby spinach leaves
- 1 can (11 ounces) mandarin oranges, drained
- 2 cups cooked chicken breast, cubed
- 1/2 cup sliced almonds
directions
Mix the dressing ingredients well and chill. When ready to serve, toss chilled salad ingredients with dressing, sprinkle on almonds and serve.
