ingredients

  • 3 lb fish fillet
  • 1 qt buttermilk
  • 1 lemon, sliced
  • 1 1/2 pint cooking oil
  • 2 cups pancake mix
  • 2 1/2 cups club soda

directions

Soak 3 pounds of fish fillets in just enough buttermilk to cover. Refrigerate in covered container with 1 lemon, sliced, over it for 2 to 3 hours to remove the fishy taste. Heat 1 1/2 pints of oil in a 2 1/2 quart saucepan. Drain off milk. Cut fillets in half and dredge in flour. In another bowl, combine 2 cups of pancake mix and 2 1/2 cups of club soda to give consistency of buttermilk. Dip floured fillets into batter and let the excess drip off into the bowl. Deep fry the fillets 4 minutes each side and warm in a 250 degree oven until all are fried.
