Mom's Meatloaf

My mom has been making this for me since I was a child. It also works very well with venison.

ingredients

  • Glaze:
  • 1/2 cup ketchup
  • 4 tablespoons brown sugar
  • 4 teaspoon white vinegar
  • Meatloaf Mix:
  • 2 pound venison
  • 6-8 slices of bacon
  • frozen bag of seasoning(onion/bell pepper mix)
  • 2 eggs
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 teaspoons worcestershire sauce
  • 1/2 cup milk
  • 2/3 crushed crackers

    For glaze: mix all ingredients in a saucepan and set aside.

    Heat oven to 350 degrees. Heat 2 teaspoons olive oil in skillet and add onion / bell pepper frozen seasoning mix. Set aside to cool while preparing the other ingredients.

    Mix 2 eggs with 1 teaspoon salt, 1/2 teaspoon pepper, 2 teaspoons worcestershire sauce and 1/2 cup milk. Add egg mixture to meat in large bowl along with 2/3 cup crushed crackers, and cooked seasoning mix. Mix with a fork.

    Turn meat mixture onto work surface, With wet hands, put mixture into 9x5 loaf pan. Brush with half of glaze, and then arrange bacon slices crosswise over loaf, overlapping slightly and tucking bacon tips under loaf. Bake for 1 hour and allow to cool for at least 20 minutes. Heat rest of glaze and serve with the meatloaf.
