Curried Chicken & Pasta Soup
One dish meal - Great in Fall & Winter
ingredients
- 1 T vegetable oil
- 1 lb chicken tenders, sliced
- 1 large yellow onion, chopped
- 5 cloves of garlic, crushed
- 1 medium red bell pepper, chopped
- 1 T curry powder
- 1 T grated fresh ginger
- 1/2 t red pepper
- 4 c chicken broth
- 2 c chopped peeled tomatoes, or 1 can(16 oz)tomatoes
- 2 large Granny Smith apples, peeled & chopped
- 1/2 c uncooked orzo
- 1/4 c currants or raisins
- Fresh cilantro & plain yogurt for garnish (optional)
directions
Heat the oil in a large saucepan. Add the chicken, onion, garlic, bell pepper, curry powder, ginger & red pepper. Saute until the chicken is opaque and the onion is tender. Stir in the chicken broth & undrained tomatoes & bring just to the boiling point. Add the apples, orzo and currants; reduce the heat. Simmer until the pasta is al dente and the chicken is cooked through. Ladle into soup bowls. Garnish with yogurt and cilantro sprigs, Serves six.
