Ham and Bean Soup
ingredients
- 1 lb white beans, soaked overnight
- 8 cups water
- 1 1/2 lb meaty smoked ham hocks
- 1 t salt
- 2 carrots diced
- 2 stalks of celery diced
- 1 medium onion
- 3/4 t thyme
- 1/4 t pepper
directions

Bring 8 cups water and beans to boil.

Add ham hocks and salt to taste

Cover ans simmer 1 hour
- 4
Remove ham hocks and continue to simmer while cutting meat off bones

Return meat to pan

Cook beans until almost tender

Add veggies and spices
- 8
Cover and simmer 1 more hour
