Poached salmon with sauce verde
ingredients
- 1 # salmon steaks
- 1 med onion, chopped
- 1/4 tsp salt
- 1/4 tsp sugar
- pepper
- 1 bay leaf
- 2 c. CIDER vinegar
- 4 c. water

Prepare night before

Put all ingredients except salmon in kettle. Simmer 25 minutes. Heat oven to 325. Pour 1/2 boiling liquid into casserole dish and lay salmon in liquid. pour other 1/2 liquid over salmon to cover. Bake 25 minutes. Remove from oven and cool in liquid. Refrigerate until ready to serve with sauce verde.

Sauce:

1/3 c. each sour cream and mayonnaise

1 Tbsp. chopped parsley

2 tsp. chopped green onion

1 tsp lemon juice

1/4 tsp salt

dash tobasco sauce

Combine all ingredients and chill at least one hour
