Chicken Paprikash
ingredients
- 1/4 c butter
- 1 c chopped onion
- 1/2 c diced red bell pepper
- 1 1/2 c reduced-sodium chicken broth
- 1 T sweet paprika
- 1 t hot paprika
- 1 t salt
- 1 T all-purpose flour
- 1 c sour cream
- 3 c cooked chicken
- 2 to 3 c hot cooked egg noodles (4-5 oz)
directions
Melt the butter in a large skillet. add the onion and sautè for 5 minutes, or until tender and deginning to turn golden brown. Add the red pepper and continue cooking for another 3 to 4 minutes until tender. Stir in the chicken broth and bring to a boil; continue boiling until the sauce has reduced by half, about 3 minutes. Stir in the sweet and hot paprika, and the salt. Stir flour into sour cream and whisk into sauce until smooth; bring to a simmer. Fold in the chicken and noodles. Serve hot.
