Yogurt and Tamarind Marinated Grilled Chicken

ingredients

  • 3/4 c plain yogurt, stirred
  • 1 tbsp tamarind paste
  • 3 tbsp finely chopped garlic
  • 1/4 c canola oil
  • 1 1/2 tbsp salt
  • 1 1/4 tsp cayenne pepper
  • 1 tbsp garam masala or ground cumin
  • 2 1/4 lbs boneless chicken thighs
  • 1 lemon, in 6 wedges

directions

  • 1

    1. combine yogurt, tamarind paste, garlic, oil, salt, cayenne and garam masala. add chicken thighs and mix well. cover and refrigerate 6 hours

  • 2

    2. preheat grill to high heat, grill

  • 3

    marinated chicken thighs on one side for about 2 minutes, turn, repeat

  • 4

    3. grill each side again for 2 minutes, poke thighs with a knife to be sure they are cooked through
