Lydia's Swedish Meatballs

The pre-made meatballs are what make this recipe fast and easy.
ingredients
- 32 Armour Meatballs
- 6-8 ounces wide egg noodles
- 1/2 cup onions
- 4-6 ounces sliced mushrooms, if desired
- 1 tablespoon butter
- Salt to taste
- 1/2 teaspoon black pepper
- 1/4 cup all-purpose flour
- 2-3 cups beef broth
- 1/4 cup heavy cream
- diced fresh parsley

Heat meatballs as directed on package.

Boil noodles as directed on package, drain and set aside.

Meanwhile in a large saucepan sauté onions and mushrooms in the butter with a splash of broth and the salt and pepper. Cook 3-5 minutes or until onions are clear.

Decrease heat to low and add flour to the onions. Whisk for 1-2 minutes.

Slowly add the beef broth, whisk until sauce begins to thicken.

Add the cream and continue to cook until the gravy reaches the desired consistency.

Add Meatballs. Serve over warm noodles and sprinkle with parsley.
notes
To get a little stronger beef flavor with the gravy, cook the meatballs on the stovetop and make gravy in the same pan.
