Grammie's American Pierogi
ingredients
- 3 lbs. potatoes
- 1 large onion (chopped)
- 2 sticks butter or margarine
- Milk
- 2 cups elbow macaroni
- 2 teaspoons salt
- 10 ounces cheese
directions
Boil potatoes in 1 teaspoon salted water until soft. Drain and whip with 1 stick of butter and milk. Boil elbow macaroni in 1 teaspoon salted water for 6 minutes. Drain and rinse. Saute onions in 1 stick of butter until soft. Remove from heat. In a large casserole layer potatoes, elbows and cheese. Make potatoes the top layer. Pour butter and onions on top and bake at 350° until hot and top is golden brown, about 45 minutes.
