Cream of Wild Rice Soup

ingredients

  • 1/4 Lb. wild rice (1/2 c. raw= 1/4 #)
  • 1 pt. water
  • 1tsp salt
  • 1 medium onion
  • 2 pieces celery
  • 4 oz mushrooms, fresh
  • 1 large carrot
  • 3/4 stick butter
  • 1/4 # bacon
  • 2/3 cup flour
  • 1 qt. + 1 cup water
  • 2 Tblsp. chicken base
  • 1 tsp slt
  • dash white pepper
  • 2/3 c. half and half

    Rinse rice, place in medium stock pot with 1 pt. water and 1 tsp salt. Bring to a boil and simmer 30-40 min until rice is tender and water is absorbed. Dice onion, celery, carrots, mushrooms and bacon. In large pot melt butter, add diced vegetables and bacon and cook until tender and bacon is crisp. reduce heat to low, add flour, stir well and cook 5 minutes.

    Add water, chicken base, salt, white peper: bring to boil, whip smooth and simmer 3-40 min.; add cooked rice, simmer 10 min.

    Add warm half and half just before serving.

Can add diced chicken or ham
