TURKEY SAUSAGE HOT POCKET

  • 8 Turkey Sausage Links
  • 1 Tablespoon Extra Virgin Olive Oil
  • Large Golden Potato - Quartered/Thinly Sliced
  • 1 Medium Jalapeno - Finely Diced
  • 1 Small Yellow Onion - Thinly Sliced
  • 4 Ounces White Button Mushrooms - Sliced
  • 4 Tablespoons Sour Cream
  • Sharp Cheddar Cheese - Shredded
  • 1 Large Egg
  • 1 Teaspoon Water
  • Kosher Salt
  • Ground Black Pepper

    Preheat oven to 400 degrees. Mix egg and water in a small bowl and set aside.

    Heat a skillet over medium high heat with the tablespoon of extra virgin olive oil. Add sausage to the skillet and cook until browned. Transfer to a plate and set aside - try to keep as much of the grease in the pan as possible.

    Reduce heat to medium and add potatoes, onions, mushrooms, jalapenos, kosher salt, and ground black pepper. Cook for 4 minutes (without stirring) and then stir. Repeat until the potatoes are done. This will allow the onions and potatoes to caramelize.

    On a floured surface, roll out puff pastry sheet and cut into 4 equal squares. Place on a baking stone and brush with egg wash.

    Working on a diagonal, top the center portion of each pastry with 1 tablespoon sour cream, 1/4 of the potato mixture, 1/4 of the turkey sausage, and shredded cheese. Fold the sides of the pastry over the filling.

    Brush tops with egg wash and bake for 20 minutes.
