BALSAMIC VINAIGRETTE CHICKEN

  • 2 cups of balsamic vinaigrette dressing
  • 2 - 3 boneless skinless chicken breasts
  • Olive oil
  • 1/4 cup of sun-dried tomatoes in a jar
  • 1/4 cup of fresh basil
  • 1/4 cup of shredded parmesan cheese

directions

In a ziploc bag combine the chicken and the dressing. Marinate for 8 hours. Heat oil in the skillet. Add marinated chicken to pan. Brown both sides of the chicken. Add sun-dried tomatoes. Cook chicken through for approximately 5 minutes on each side. Remove chicken and sun-dried tomatoes from pan and place in a shallow baking dish. Top with fresh basil and parmesan cheese. Place in pre-heated 400 degree oven until browned on top. Garnish with chopped roma tomatoes and a dash of shredded parmesan.
