Authentic Jewish Latkes.

ingredients

  • 5 large russet potatoes
  • 2 medium onions
  • 2 eggs lightly beaten
  • 4 Tbs toasted bread crumbs
  • 2 tsp salt
  • 2 tsp baking powder
  • pepper
  • schmaltz or vegetable oil for frying

directions

Grate the potatoes and onions by hand, using the large holes in a box grater. Place in a towel and wring out excess liquid. Set aside. In a large bowl combine eggs, bread crumbs, salt, baking powder and pepper. Stir in the potatoes and onions and mix well. Heat oil in a large skillet over medium heat. Drop by spoonfuls into the pan. Flatten latkes slightly while cooking and turn only once. Remove from pan when latkes are crisp and golden. Drain on paper towel. Serve hot with apple sauce or sour cream.
