Tishpishti - Mom's
ingredients
Tishpisti - Mom’s- 2 medium oranges
- 6 cups matzo meal
- 3 1/2 cups ground walnuts
- 1 1/2 cups oil
- 1 cup sugar
- 6 large eggs
- 3 cups water
- 2 1/2 cups sugar
- 1/2 lemon
- 1 medium orange

Squeeze oranges and set juice aside. Boil rinds for about 1 hour. Cool and grind. Mix matzo meal, walnuts, orange peel, make sure it is well blended. Add sugar. Beat eggs and 1 cup of oil and fold into mixture. Add 1/3 cup water. Mix until moist, adding more oil if necessary. Mixture will be thick.

Grease 13“x9” pan and heat slightly. Gently pour mixture into pan and press down to distribute evenly. Cut across with a straight line then diagonal forming a diamond. Press 1/2 walnut slightly into each piece. Take 1/2 cup oil and evenly pour over mixture. Cook at 350° for 45 minutes until evenly browned.
Syrup
Add water and sugar and bring to a boil and then simmer. Squeeze lemon and orange and add to mixture, stirring occasionally. Remove cake from oven and immediately pour syrup evenly over cake. Cover with a towel and let stand.
