Chicken Lettuce Wraps

Ingredients
  • 3 T. oil
  • 2 boneless skinless chicken breasts
  • 1 cup water chestnuts, minced
  • 2/3 cup mushrooms, minced
  • 3 T. chopped onions
  • 1 t. minced garlic
  • 4-5 leaves iceberg lettuce
Special Sauce
  • 1/4 cup sugar
  • 1/2 cup water
  • 2 T. soy sauce
  • 2 T. rice wine vinegar
  • 2 T. ketchup
  • 1 T. lemon juice
  • 1/8 t. sesame oil
  • 1 T. hot mustard
  • 2 t. water
  • 2 t. garlic and red chili paste
Stir Fry Sauce
  • 2 T. soy sauce
  • 2 T. brown sugar
  • 1/2 t. rice wine vinegar

    Make the special sauce by dissolving the sugar and water. Add soy sauce & next 4 ingredients. Mix well and refrigerate until ready to serve. Combine the hot water with the hot mustard and set aside. Eventually add your desired measurement of mustard and garlic chili sauce to the special sauce to pour over the wraps.

    Bring oil to high heat in large frying pan. Saute the chicken for 4-5 minutes or until done. Remove chicken from the pan; mince after cooling.

    With the pan still on high heat, add another tablespoon of vegetable oil. Add chicken, garlic, onions, water chestnuts, and mushrooms to the pan. Add the stir fry sauce and saute the mixture for a couple minutes then serve it in the lettuce cups. Top with special sauce.
