Ginger Cashew Shrimp
ingredients
- 1 lb. uncooked deveined peeled medium shrimp
- 1 Tbsp. minced peeled gingerroot
- 2 cloves garlic, minced
- 1/4 cup lite teriyaki sauce
- 1/4 cup fat-free reduced-sodium chicken broth
- 1/4 tsp. crushed red pepper
- 2 tsp. olive oil
- 4 cups small broccoli florets
- 2 carrots, thinly sliced
- 1 cup PLANTERS Cashew Halves with Pieces

TOSS shrimp with ginger and garlic. Refrigerate 1 hour. Mix teriyaki sauce, broth and crushed red pepper.

HEAT oil in large skillet. Add shrimp mixture; cook 3 to 5 min. or until shrimp turn pink. Add teriyaki mixture, broccoli and carrots; mix lightly. Cook until vegetables are crisp-tender, stirring frequently.

ADD cashews; mix lightly.
