Cilantro Bacon Potato Salad
ingredients
- 1 1/2 c. reduced-fat mayonnaise
- 2 medium onions, chopped and sauteed in olive oil
- 1 lemon, juiced
- 3 Tbsp. chopped garlic
- 6 Tbsp. chopped fresh cilantro leaves
- 3 lbs. red potatoes, boiled until tender (about 15 min.)
- 12 oz. bacon, cooked until crispy and drained
- Salt and pepper to taste
- Chopped chives or green onions, for garnish
directions
In a large bowl, combine mayonnaise, onions (cooled), lemon juice, garlic, and cilantro. Quarter the cooked red potatoes and add to the bowl. Add the cooked bacon and season with salt and pepper. Stir well. Chill before serving.
