Chimichanga Time
“sometimes all a cook needs is the right inspiration...”
ingredients
- 1/2 c chicken, sliced thin
- 1/2 onion sliced thin
- 2 tomatoes, chopped
- 3 oz canned chilis
- 1 tsp salt
- 1.5 tsp oregano
- 2 tsp chili powder
- 2 tbsp cilantro, chopped
- 1/2 cup celery and carrot, julienne
- 1 c vegetable oil for frying
- 6 tortilla shells/thai pastry wraps
- 1/2 c shredded cheddar or mozza
directions

1. cook oil (bacon grease is great) and add onion to saute

2. lower heat - add chili, salt, oregano, chili powder and cilantro (simmer for 3 minutes)

3. add chicken and tomatoes, mix and simmer for 2-3 minutes

4. drain filling and then add 1/2 cup to each shell, enclose

5. fry in oil till golden brown

6. top with cheese, lettuce, green onion, salsa and sour cream
