Corn Latkes
“if corn oil comes from corn, where does baby oil come from?”
ingredients
- 3 c frozen corn kernels
- pinch salt
- 1 tsp sugar
- 3 large egg whites
- 1/4 c all purpose flour
- 4 tsp canola oil
directions

1. place two non-stick baking sheets in oven and preheat to 450

2. cook corn in saucepan until tender. drain corn and cool - press lightly to release excess water

3. puree 1 c of the corn - add salt, sugar, and egg whites and mix lightly
- 4
4. transfer to a bowl and mix with flour and remaining corn
- 5
5. brush oil on hot baking sheets and spoon small mixture onto pans
- 6
6. bake 6-8 minutes per side

7. serve with sour cream and scallions
