Raucous Risotto
“i cook with wine, sometimes i even add it to the food.” w. c. fields
ingredients
- 3-4 c chicken stock
- 2 tbsp butter
- 1/2 c onions, diced fine
- 3 cloves garlic, minced
- 1/2 c fresh basil leaves, chop
- 1 c arborio rice
- 1/2 c dry white wine
- 1/2 c parmesan cheese
- 3 tbsp fresh parsley
- pinch salt and pepper

1. bring chicken stock to boil then simmer. can dilute with 1 c water if needed

2. in heavy pot, melt butter - add onions and garlic, stir and cook til transparent

3. add rice and simmer 1-2 min until grains glisten
- 4
4. stir in wine till nearly absorbed
- 5
5. add 1 cup of stock till absorbed. repeat process until rice is al dente.

6. add 1/2 of basil

7. when rice is at desired texture, add butter, parsley, basil, and cheese. stir and serve immediately
