Trinidad Sponge loved by all.

- 2 cups granulated sugar
- 1 cup butter
- 4 eggs
- 2 tsp. vanilla essence
- 3 cups flour
- 1/2 tsp. baking soda
- 1/2 tsp. baking powder
- 1 tsp.cinnamon
- 1 tsp. nutmeg
- 1/2 tsp. salt
- 1 tbsp. lemon juice
- 1 cup milk
-Sift flour and add salt,baking powder and baking soda.
-Beat egg yolks until thick and pale in color.
-Cream sugar and butter until smooth
-Add lemon juice, lime zest and milk.
-Add eggs to sugar and butter mixture.
-Slowly add dry ingredients into mixture.
-Beat egg whites until stiff; fold into batter.
-Pour batter into ungreased 9" tube pan;
-Bake in a preheated 325 degree F. oven until top springs back when touched.
-Invert and cool completely.
-Loosen cake with a spatula and serve.
