Chicken, Tomato & Mushroom Casserole
ingredients
- 2 chicken breast
- 5 rashes of bacon (no rind)
- 1 onion
- 1 cup of chopped mushrooms
- 1 tin of 250g tomatoes (in herbs)
- 1 tin of 150g mushrooms (in butter sauce)
- 2 bay leaves
- 1/4 cup plain flour
- Salt & Pepper (for seasoning)
- 3 tspns of brown onion gravy boat
- garlic

Cut the chicken breast into pieces, not too small. Place the flour on a plate with some pepper & salt for seasoning and cover the chicken with the mixture. Put some oil into a frying pan and place the chicken in the pan. Braise the chicken on all sides. Roughly chop the bacon, onion and mushrooms and throw in the frying pan after the chicken is braised. Fry the onion, bacon, mushroom and garlic for a minute or 2 but not until brown.

Meanwhile place the chicken in a casserole dish and add bay leaves. Once the onions, bacon, mushrooms & garlic are finished add to the casserole dish. Season with pepper. Add can of tomatoes and mushrooms to casserole dish.

While you are preparing above put the kettle on and boil. Place the gravy powder into a cup with approx a teaspoon or 2 of flour mixture (to thicken). Add the boiling water to make gravy. Add the cup of gravy to the casserole dish.

Place in oven for 1 hour on 180 degrees celesius (fan forced) or until cook.

Boil some rice and serve.

Tip: the chicken absorbs the flavour so best if you prepare the night before!!
