Low fat Spanish Payella
I have been making this dish for a while and the sauce freezes really well.
ingredients
- Converted rice 1 cup cooked and set aside
- Chicken breast 1 (cut up)
- 2 to 3 lean turkey sausages (sliced)
- Shrimps 2 cups
- Red bell peppers 4 thinly sliced
- Red onion 1 thinly sliced
- Garlic 6 to 8 chopped
- Frozen peas 1 cup
- Red wine 1/4 cup
- Can of whole tomatoes 1
- 2 Bay leaf
- A pinch of saffron
- 1 tsp of rosemary
- Paprika and salt to taste
directions
In 2 tbs of olive oil, brown chicken and turkey. Remove and set aside. In the same oil fry onions and garlic till browned and caramalized. Add paprika and continue to stir. Now add the canned tomatoes and all the herbs and salt. Cook till the tomatoes soften considerably. Add the red peppers and peas and cook for about 10 minutes. Add the shrimps finally. To this sauce add the cooked rice and continue to stir and mix. Turn the stove to low and cook the mixture for a while with the lid on. A bit of browing at the bottom of the pan adds to the unique flavor.
