Sweet Potato Casserole

Sweet and creamy with a crunchy topping this is like having dessert for dinner!
ingredients
- 3 large sweet potatoes
- 1 cup sugar
- 2 eggs, well beaten
- 1/4 stick butter
- 1 tsp vanilla
- 1 tsp cinnamon
- 1/2 tsp salt
- Topping;
- 1 cup light brown sugar
- 1/2 cup crushed corn or bran flakes or 1/3 cup flour
- 1 cup chopped pecans
- 1/3 stick melted butter
directions
Wash potatoes and prick with a fork. Bake in preheated 400 degree oven for 45 minutes or until tender. Peel and mash in a large bowl. Add eggs, butter, vanilla, cinnamon and salt; mix well. Transfer to 2 qt casserole. In medium bowl combine topping ingredients then sprinkle over top of casserole. Bake at 350 degrees for 35 minutes.
notes
You can peel and boil the potatoes until tender but drain very well or the dish will be loose.
