Banana Bread

ingredients

  • 1/2 cup soft butter or margarine
  • 1 cup sugar
  • 1 tsp vanilla
  • 2 eggs
  • 1 1/3 cups mashed ripe bananas (3 or 4 medium)
  • 1 Tbsp milk
  • 2 cups unsifted flour
  • 1 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup chopped nuts (optional)

    Grease 9 by 5 by 3-inch loaf pan.

    Cream butter, sugar, and vanilla until light and fluffy in large bowl with electric mixer.

    Beat in eggs.

  • 4

    Combine bananas and milk in another bowl.

    In a third bowl, mix flour, soda and salt.

    Blend dry ingredients into creamed mixture alternately with bananas.

    Stir in nuts if desired.

    Turn into greased loaf pan.

    Bake at 350 degrees 1 hour 10 minutes, or until cake tester inserted in center comes out clean.

    Cool 10 minutes; turn out of pan.

    Cool completely.
