Gluten Free Gnocchi
ingredients
- 2 lb mashed potatoes
- 1 cup rice flour
- 3/4 cup potato starch
- 1/4 cup corn starch
- 1 tablespoon butter
- 1 tablespoon Parmesan cheese
- 2 eggs
- Salt to taste
directions
Mix all ingredients with an electric mixer. Knead lightly. Shape small portions of the dough into long snakes. On a floured surface, cut snakes into small pieces. Place a few gnocchi in salted boiling water. Cook for 3-5 minutes. Remove cooked gnocchi with a slotted spoon. Repeat until all are cooked. Cover with hot tomato sauce and serve. You can he re-heat them using a microwave oven.
