Spinach Salad with Sugared Nuts
ingredients
- 1 c pecan or walnut halves
- 1/3 c firmly packed light brown sugar
- 2 tbsp butter or margarine, melted
- 1/4 tsp ground cinnamon
- 1 (10 oz) pkg fresh spinach- 8cups torn
- 1 ripe pear, thinly sliced
- 1 Red Delicious apple, thinly sliced
- Brown Sugar Vinaigrette:
- 1/2 c white wine vinegar
- 1/3 c vegetable oil
- 1/4 c firmly packed light brown sugar
- 1/4 tsp salt
- 1/4 tsp ground cinnamon

Stir together first 4 ingredients, and spread nut mixture on a lightly greased baking sheet.

Bake at 325°F for 15 to 20 minutes, stirring often. Cool and break apart.

Combine spinach and fruit; drizzle with Brown Sugar Vinaigrette, and sprinkle with sugared pecans.

Whisk all ingredients together.

To make ahead, tear the spinach and prepare the nuts and dressing the day before.
