Gails Orzo Salad with roasted vegetables
ingredients
- orzo
- colored peppers
- red onions
- olive oil
- S&P
- fresh crushed garlic
- toasted pine nuts
- cubed feta
- shallots
- chopped basil
- Italian parsley
- fresh lemon juice
- lemon zest
directions

1.Cut colored peppers and red onions into bite size pieces. Toss with olive oil, S&P, & fresh crushed garlic

2. spread out onto baking pan and roast at 400 for 40 mins

3. cook orzo according to instructions

4. toss cooked orzo with roasted veg, toasted pine nuts, cubed feta, chopped shallots, chopped basil and italian parsley, olive oil, fresh lemon juice, lemon zest, S&P to taste
