Sun Crock Pickles & Refrigerator Pickles

Recipes from Diane and Ruth. As for Diane’s sun crock pickles, setting things out in the sun to essentially “cook” was not an abnormal sight for the family. Grandma Henry’s “sun tea” was a great favorite among everyone. She’d put water and tea bags into a huge jar (the kind that used to contain colossal-sized pickles) and leave it out in the sun to steep.

ingredients

Diane’s Sun Crock Pickles:
  • 7 cups water
  • 3/4 cup vinegar
  • 3 TBS pickling salt
  • 1/4 tsp alum
  • dill (Mom used 1 1/4 tsp dill seed per quart)
  • pickling cucumbers (pickle size
  • cucumbers)
Ruth’s Refrigerator Pickles:
  • 4 cups water
  • 1 cup white vinegar (5% acidity)
  • 1/4 cup pickling salt
