Family favorite, referred to as chinese chicken

ingredients

  • For the marinade:
  • 3 tablespoons dry sherry or chinese rice wine
  • 1 1/2 tablespoons oyster flavored sauce
  • 2 teaspoons cornstarch
  • 1 pound boneless, skinless chicken, cut into one inch pieces
  • For the sauce:
  • 1/4 cup chicken broth
  • 1 tablespoon rice vinegar (go easy on this one)
  • 1 tablespoon regular soy sauce
  • 1 tablespoon dark soy sauce
  • 1 tablespoon sugar
  • 2 teaspoons sesame oil
  • 2 tablespoons cooking oil
  • 6 small dried red chilies
  • 1 tablespoon minced garlic
  • 2 teaspoons minced ginger
  • 2 green onions, cut into one inch lengths
  • 1/2 teaspoon crushed dried red chilies
  • 1 1/2 teaspoon cornstarch dissolved in one tablespoon water
  • 1/4 cup roasted peanuts, chopped

directions

    Combine marinade ingredients in a bowl. Place chicken in marinade and turn to coat. Let stand ten minutes.

    Combine sauce ingredients in a bowl.

    Place a wok over high heat until hot.

  • 4

    Add oil, swirling to coat sides.

  • 5

    Add chilies and stir fry for ten seconds.

  • 6

    Add chicken and stir fry for two minutes.

  • 7

    Add garlic, ginger, green onion and crushed chilies, stir fry for one minute.

  • 8

    Add sauce and cook, stirring for one minute. Add cornstarch solution, stirring until sauce boils and thickens.

  • 9

    Place chicken on a serving plate over rice and sprinkle with peanuts.
