General Tso's Chicken
Family favorite, referred to as chinese chicken
ingredients
- For the marinade:
- 3 tablespoons dry sherry or chinese rice wine
- 1 1/2 tablespoons oyster flavored sauce
- 2 teaspoons cornstarch
- 1 pound boneless, skinless chicken, cut into one inch pieces
- For the sauce:
- 1/4 cup chicken broth
- 1 tablespoon rice vinegar (go easy on this one)
- 1 tablespoon regular soy sauce
- 1 tablespoon dark soy sauce
- 1 tablespoon sugar
- 2 teaspoons sesame oil
- 2 tablespoons cooking oil
- 6 small dried red chilies
- 1 tablespoon minced garlic
- 2 teaspoons minced ginger
- 2 green onions, cut into one inch lengths
- 1/2 teaspoon crushed dried red chilies
- 1 1/2 teaspoon cornstarch dissolved in one tablespoon water
- 1/4 cup roasted peanuts, chopped

Combine marinade ingredients in a bowl. Place chicken in marinade and turn to coat. Let stand ten minutes.

Combine sauce ingredients in a bowl.

Place a wok over high heat until hot.

Add oil, swirling to coat sides.

Add chilies and stir fry for ten seconds.

Add chicken and stir fry for two minutes.

Add garlic, ginger, green onion and crushed chilies, stir fry for one minute.

Add sauce and cook, stirring for one minute. Add cornstarch solution, stirring until sauce boils and thickens.

Place chicken on a serving plate over rice and sprinkle with peanuts.
