Parker Meyer's Famous Caesar Salad
ingredients
- 2 heads romaine
- 2 cups diced french bread
- 1 cup olive oil
- 3 garlic cloves
- 1 tsp salt
- 1 tsp ground pepper
- 2 tbsp fresh lemon juice (1 large lemon)
- 1 coddled egg
- 1/2 cup parmesan
- anchovy paste

Wash, prepare, dry and refrig. romaine

Peel and halve garlic cloves and put in a jar with oil in refrig. for >2 hours

Saute croutons (french bread) in 1/4 cup garlic-oil and cloves until browned. Discard garlic and drain croutons.

Put Romaine in chilled salad bowl (rubbed with anchovy paste) & add 1/2 cup oil. Toss well.

Add croutons, salt, pepper & lemon juice. Break egg into bowl, toss and add parmesan.

Use remaining garlic-oil to brush remainder of french bread & heat.
