M.O.P.S. Salad

ingredients
- 1/2 cup white sugar
- 1/2 cup lemon juice
- 2 tsp. salt
- 1 Tbsp. poppy seeds
- Romaine lettuce
- 4 oz. shredded swiss or cheddar
- 1 cup cashews
- 1/4 dried cranberries
- 1 tsp. Dijon mustard
- 2/3 cup vegetable oil
- 1 apple peeled and diced
- 1 pear peeled and diced

Dressing:

In a blender, combine sugar, lemon juice, onion, mustard and salt. Process until well-blended. Add oil, then poppy seeds and blend for a few minutes.

Salad:

In a large bowl, combine lettuce, cheese, cashews, cranberries, apples and pears. Toss to mix; then pour dressing over salad just before serving and toss to coat.

*Can substitute glazed cashews and balsamic for the oils, sugars and mustard.
