Nancy's Dumplings

ingredients
- 1 cup diced (less then a 1/2 inch square) pork, chicken or my favorite... shrimp.
- 1/4 cup minced scallion
- 1/4 cup peeled & shredded carrot
- 1/4 cup minced cabbage
- 1 teaspoon minced garlic
- 1 teaspoon peeled & minced fresh ginger
- salt & pepper to taste
- 1 teaspoon soy sauce
- 1/2 teaspoon sugar
- 1 teaspoon dark sesame oil
- 24 wonton wrappers (usually near the tofu in the grocery store)

combine the first nine ingredients. place one teaspoon of filling in each wrapper, then fold, pinching closed with a touch of water.

i steam my dumplings, but you can also fry them
Dipping Sauce for Dumplings

1/4 cup soy sauce

1 tablespoon dark sesame oil

1 1/2 teaspoon rice or light vinegar

1/2 teaspoon minced garlic

1 tablespoon peeled minced ginger

Mix all together.

love dumplings, so in my obsession with the mouth watering, easy to eat pot stickers, i made and remade different versions for a week... until my partner acted like i was making peanut butter and jelly for dinner. so, here is the version that all my peeps loved most. make extra to freeze and you’ll have a quick app or meal in 8 minutes.

this makes about 24 dumplings, enough for 4 to 8 people depending on how hungry the peeps.
