Chicken Vesuvio
ingredients
- 3 chicken breasts, split or 1 whole chicken cut up
- 2 Idaho potatoes
- 1 clove garlic, chopped
- oregano
- Marsala or sautern wine
- parsley

1. Brown chicken in butter.

2. Sprinkle with 1 clove of finely chopped garlic, chopped parsley, oregano, salt and pepper to taste. 3. When browned add 1 cup sautern or Marsala wine. Do not cover so that chicken absorbs wine.

4. Add potatoes cut into thick french fries. Sprinkle with parsley and oregano.

Charlotte added this note at the bottom: I brown the potatoes a little in oil and then add to chicken and oregano - finish in 350 oven 45 minutes.
