Spinach ~ Artichoke Dip

Gina mixes up all the ingredients and sticks it in the microwave - fast & easy and sometimes she uses it as a stuffing for chicken. Yum!

ingredients

  • 2 10-ounce box frozen cut or chopped spinach (let it defrost)
  • 2 cans or jars of artichoke hearts, drained and roughly chopped
  • 1 1/2 cups mayonnaise (can use less mayo and still good)
  • 1 1/2 cup grated Parmesan or cheddar cheese
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon white pepper
  • 1 1/2 teaspoons crushed garlic
  • Pita chips, tortilla chips, or sliced French bread

    Mix and cook in the microwave

    Heat oven to 400° F.

    Squeeze the spinach between paper towels to remove excess moisture. In a medium bowl mix it all up.

    Bake until lightly golden and heated through, about 15 minutes. Serve warm with the chips or bread and lemon wedges, if desired.
