Lentil Soup
ingredients
- 2 cups dried lentils
- 2 to 3 T butter or oil or water
- 2 onions, chopped
- 2 carrots, chopped
- 2 cloves garlic, minced
- 4 cups vegetable stock or water
- 1/2 t ground cumin
- 1/2 t ground coriander
- 1/4 t curry powder
- 1/4 t salt
- grated peel of lemon

Place lentils in large pot and cover with water.

Bring to a boil and simmer for half an hour.

Meanwhile heat 2 T water in skillet and cook vegetables and garlic until soft.

Add vegetables, seasoning and broth to lentils.

Simmer at least one hour.

Variation: Puree in a food processor.
