Celebration rice with pine nuts and raisins
ingredients
- 4 Tbsp vegetable oil
- 1/2 cup vidalia onion finely chopped
- 2 cups long grain white rice
- 4 cups hot chicken broth
- 1 cup raisins
- salt and pepper
- 1 cup pine nuts
- 2 Tbsp chopped fresh parsley
directions

Heat vegetable oil in heavy saucepan over low heat, add onion and saute, stir often until soft but not brown.

Add rice and cook stirring for 2 minutes.

Add broth, raisins, salt and pepper, and bring to a boil.

Cover and simmer 18 to 20 minutes.

Toast pine nuts in a 400° oven for 3 to 5 minutes until golden brown.

Stir in pine nuts and serve.
