ingredients
- Ingredients:
- 7 or 8 chicken thighs
- 3 Tbls vegetable oil
- 1 cup soy sauce
- 1 cup vinegar
- 1/2 garlic clove
- 3 bay leaves
- Black pepper to taste
- 1/2 cup pineapple juice (optional)
- 3 to 4 russet potatoes peeled and cut into large chunks
- White rice

1. Heat oil in the pot.

2. Smash and peel garlic cloves, sauté in pot over medium heat.

3. Place chicken thighs in pot and brown, do not fully cook.

4. Stir in soy sauce, vinegar, and pineapple juice (optional).

5. Add black pepper, potatoes, and bay leaves.

6. Cover and simmer over medium heat for 45 minutes.

7. Serve over rice.
