Refrigerator Bran Muffins
ingredients
- 4 cups All-Bran cereal
- 2 cups 100% bran cereal
- 2 cups boiling water
- 1 cup raisins
- 1 cup dates
- 1 quart buttermilk
- 3/4 cup canola oil
- 1 cup molasses
- 1/2 cup brown sugar
- 2 eggs
- 4 egg whits
- 5 cups wholewheat flour
- 5 tsp baking soda
- 5 tsp cinnamon
- cooking spray

Pour boiling water over raisins, dates, and cereal. Let mixture cool.

Add buttermilk to bran mixture. Cream oil, molasses, and sugar. Add eggs to the creamed mixture and beat until fluffy. Add mixture to bran mixture.

Stir flour, baking soda, and cinnamon. Add to the batter and mix well.

Fill each muffin tin 2/3 full with batter. Bake at 375° for 20 to 25 minutes.
