Honey & Goat Cheese Fig Muffins
Good breakfast muffin.
ingredients
- 3/4 cup crumbled goat or reduced fat cream cheese
- 2 tablespoons honey
- 1 teaspoon lemon zest
- 1 1/4 teaspoon vanilla extract divided
- 2 cups white whole wheat flour
- 1 1/2 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 2 eggs
- 1 egg white
- 3/4 cup packed brown sugar
- 1 cup low fat or non fat buttermilk
- 1/3 cup olive oil
- 1 1/4 cup chopped dried figs
- 3 tablespoons sugar

Preheat oven to 425. Get muffin pan ready with paper cups or non stick spray.

Combine goat or cream cheese with honey, lemon zest, and 1/4 teaspoon vanilla and set aside.

Whisk flour, baking powder, soda, and salt in a large bowl. Lightly beat the eggs and egg white in another bowl.

Add the brown sugar and remaining 1 teaspoon vanilla and whisk until dissolved. Gradually whisk in buttermilk and oil until smooth. Add the wet ingredients to the dry and stir until just combined. Fold in the dried figs.

Spoon batter into muffin cups, just about almost halfway. Spoon a drop of honey cheese mixture into the center. Then add more batter to cover. Sprinkle with a bit of sugar. Repeat until all are filled.

Bake until the muffin edges are a bit brown and the tops spring back. About 13-15 minutes. Eat!!!
