Chiliquiles
or “Chilaquiles”
ingredients
- 1/2 cup cooking oil
- 4 corn tortillas (cut into 1-inch squares)
- 1-2 garlic cloves finely chopped
- 1/4 cup chopped fresh green chili peppers (such as poblano)
- 1/4 cup chopped fresh tomato
- 1/8-1/4 cup chopped sweet onion
- 4 eggs
- 1/4 cup Monterey Jack cheese
- 1/4 cup chopped cilantro
- salt, to taste
- 1 avocado, sliced
- queso fresco or cojita cheese for garnish

Put 1/2 cup of oil into a skillet and fry tortillas until they are very crispy, set aside.

Drain some of the oil and add the garlic and saute for 10 seconds or so. Add the peppers, tomato and onions and saute about a minute. Put mixture in a dish.

Fry the eggs and in the same pan.

Place the eggs on top of the mixture in the dish.

Sprinkle the cheese on top and cover to melt.

Garnish with cilantro, salt to taste and avocado.

Serve.

*This dish should be served for breakfast or brunch.
notes
*Serve with sour cream, creme fraiche or crema mexicana. Also, hot sauce adds a nice kick or squeeze a lime on it. *Fried potatoes can be added to this dish or used as a side along with refried beans. *Photo slightly differs from the recipe.
