Ricotta Lemon Currant Muffins
A high protein, low sugar “cake” for little messyfish’s
ingredients
- 1 cup ricotta cheese
- 1 egg
- 1/2 cup milk
- 4 tablespoons melted butter (or oil)
- 1 lemon (zest and juice)
- 1 banana (ripe, mashed)
- 1 tsp vanilla
- 4 tbsp rice malt syrup
- 1/2 cup currants
- 2 cups wholemeal flour
- 2 tsp baking powder
- 1/2 tsp salt

In a large bowl put wet ingredients

then stir in dry ingredients

mix together,

scoop into cupcake papers
- 5
bake in 180c oven for 20 mins or until cooked
