MICRO-NUT BRITTLE
I have no idea where this recipe came from.
ingredients
- 1 cup dry roasted peanuts
- 1 cup granulated sugar
- 1/2 cup white corn syrup
- 1 tsp butter
- 1 tsp vanilla extract
- 1 tsp baking soda

Stir together sugar and syrup in 1 1/2 quart glass measuring cup.

Place in microwave oven and cook 4 minutes on HIGH.

Stir well and add peanuts.

Cook for an additional 3 1/2 minutes.

Add butter and vanilla to syrup, blending well.

Return to oven and cook 1 1/2 minutes more.

(Peanuts will be lightly brown and syrup very hot)

Add baking soda and gently stir until light and foamy.

Pour mixture onto lightly greased cookie sheet.

Let cool 1/2 to 1 hour.

When cool, break into small pieces and store in airtight container.
