Blueberry Spinach Salad

ingredients

  • 1/2 cup vegetable oil
  • 1/4 cup raspberry vinegar
  • 2 tsp dijon mustard
  • 1 tsp sugar
  • 1/2 tsp salt
  • 1 package (10 ounces) fresh spinach
  • 1 package (4 ounces) blue cheese crumbles
  • 1 cup fresh blueberries
  • 1/2 cup chopped pecans, toasted

directions

  • 1

    In a jar with a tight fitting lid, combine first 5 ingredients and shake well.

  • 2

    In a large salad bowl, toss the spinach, blue cheese, blueberries, and pecans.

    Add dressing and toss gently.

    Serve immediately
