Simmered Yellow Squash
A simple way to enjoy yellow squash and sweet Vidalia onions.
ingredients
- 4 tablespoons butter
- 2 medium Vidalia onions, peeled and sliced into 1/3 inch wedges
- 9 yellow squash, washed, trimmed, and sliced crosswise into 1/3 inch slices
- 1 teaspoon salt, or more to taste
- 1/2 teaspoon pepper, or more to taste (I use lots more)
directions
Heat the butter until foaming in a large saucepan or Dutch oven. Add the onion wedges, and cook over moderate heat for 5 minutes stirring often. Add the sliced squash, salt and pepper, and stir well to coat the squash with the butter and seasonings. Reduce the temperature to low, and cook, covered, for 20 minutes or longer, stirring often, until the squash is very tender and yielding. Taste for seasoning and adjust as needed.
