Georgia's Lettuce Wraps
Chinese spiced turkey stir fry.
ingredients
- 1 lb Ground Turkey
- 1 Large Eggplant. diced
- 4 Fresh Shiitake Mushrooms, chopped
- 1/2 Purple Cabbage, chopped
- 1/2 Red Onion
- 6 Tbs Hoisin Sauce
- 2 Tbs Sesame Oil
- 6 Tbs Lite Soy Sauce
- 1/4 tsp five-spice powder
- 1 8oz can sliced Water Chestnuts, drained and chopped
- 1/2 cup crispy Asian noodles
- 1 cup edamame
- 12 Large Iceberg Lettuce Leaves

Stir fry the turkey in a large wok or pot. Remove from pot when fully cooked.

In a separate pot begin to boil edamame.

Add Sesame Oil and saute onions and eggplant let cook for 5 minutes. Then add mushrooms and cabbage, let cook for 5 more minutes. Stir in water chestnuts and turkey. Immediately hoisin sauce and soy sauce. Stir together thoroughly and cook for 1o minutes.

When fully cooked adjust seasoning to taste, you may need more soy or hoisin sauce.

Drain edamame and season with kosher salt.

Serve one large spoonful on individual lettuce leaves with edamame on the side.
