Blueberry Coffee Cake
This recipe is from Melissa’s friend Donna. It is delicious!!
ingredients
- 2 cups all purpose flour
- 1 cup sugar
- 1 tablespoon baking powder
- 1 teaspoon salt
- 1/2 cup unsalted butter
- 1 cup milk
- 2 eggs, well beaten
- 1 teaspoon vanilla extract
- 1 1/2 cups blueberries
- Topping:
- 1/3 cup brown sugar
- 1/3 cup granulated sugar
- 2 teaspoons cinnamon
- 1/2 cup chopped nuts
- 1 tablespoon melted butter

Preheat the oven to 350 degrees. Grease a 13x9 inch pan;set aside. In a large bowl combine flour, sugar, baking powder and salt. Cut in butter with a pastry blender until mixture resembles coarse crumbs. Make a well in the center. Add milk, eggs and vanilla; stir until just moistened, about 15 strokes. Fold in blueberries. Spread batter evenly into pan.

In a small bowl combine all topping ingredients. Sprinkle evenly over batter in pan. Bake for 35 minutes or until toothpick inserted in center comes out clean. Cool on wire rack. Can be frozen up to 3 months if wrapped well. Thaw wrapped at room temperature for 3 hours.
